             Pulses or dal are an important part of any cuisine as these are major protein providers. Some pulses take a lot of time to cook. Sometimes even after 8-10 whistles the dal may not get cooked properly. The time taken to cook depends on the nature of the pulses and the type of water.  Soak dal overnight; add a few drops of sesame oil and then pressure cook it. You can be sure of a finely cooked dal. Alternately if you have forgotten to soak it overnight, you can soak in boiled water for a minimum of 30 minutes and then cook.     1. Thank you for your question. Over cooking does affect the nutrients of food. In order to avoid over cooking the pulses are soaked in water for a longer time. If not soaked, then one may have to cook it for a longer time, which may result in overcooking and loss of essential nutrients. Please note that these are old techniques which have been passed on through generations.

  2. I am facing a lot of problem with cooking dhal in pressure cooker. As drinking water is shortage , we have to depend on bore water and with this bore water dhal will not be cooked smoothly. We never get a feeling of good tasted dhal.

    Normally i try to add one or two drops of oil in the dhal before cooking and wait for 7,8 whistles. But now a days it is also not working.

    Now my question is soaking dhal in the water for long hours, then dhal made with that lentils , can it be used for dinner also ?? Or we have to consume it immediately??

    That dhal how many hours can be stored??
